Hello Everyone! I'm so sorry it's been about a month since I have posted anything. I took a vacation to Ireland with my husband, daughter and my Sister!! Remember I mentioned that before? Well, sure enough our family dream of heading to Ireland did come true! It came and went so quick though. I can't wait to do it all over again.
Anyways, I will be posting some recipes from my time spent in Ireland soon...I PROMISE! For now I am going to post about something so amazing, only amazing genius people could have thought of this. It's that good. It's Cake Batter Ice cream!!!! Yes, it's an ice cream that tastes just like cake batter. Oh man, it was good. The end result was this thick creamy goodness that tasted just like cake batter. I made this for one of my best friends birthday's and I can't wait for her to try it!
OK, so onto the recipe process... Everything was very easy. Your just mix all the ingredients in a saucepan over medium-low heat and constantly stir until it reaches about 160F. Then, you let it cool in the frig and pop it in your ice cream maker. Easy enough right? WELL... All was fabulously well until I got to the ice cream maker part. So, I went to turn on the maker, and nothing...NOTHING!! I thought to myself, ok maybe I should put all the compartments together 1st. Then i'll add the ice cream and turn it on...That didn't work either:( I borrowed this ice cream maker from a great friend and all I can think of is the fact that we have 220V and have to fix it up to a 100V to work. The pains of living overseas with America equipment. After the initial shock of making a product and to finally get it ready and not work, I just poured it into a plastic container, put plastic wrap on top, sealed it and hoped for the best in the fridge. I'd have to say it turned out very nicely. It took quite a while-almost all day to set up, but it was this rich velvety texture with that wonderful flavor of cake batter:) Awe sweetness! So, when you make this know that you should use a ice cream maker as stated, but if you don't have one know that you can do what I did and still get a good result!
Cake Batter Ice Cream Recipe:
1 cup milk
1/2 cup white sugar
2 egg yolks, beaten
1 Tbsp vanilla extract
2 cups heavy whipping cream
3/4 cup yellow cake mix, sifted
Directions:
1. Whisk together milk, sugar, egg yolks, vanilla,
cream, and cake mix in a saucepan until well blended. Cook over
medium-low heat until mixture reaches 160 degrees F,
stirring frequently. Remove from heat and place in the refrigerator or
freezer until liquid is cold.
2. Pour the chilled mixture into an
ice cream maker and freeze according to manufacturer's directions until
it reaches "soft-serve" consistency. Transfer ice cream to a one- or
two-quart lidded plastic container; cover surface with plastic wrap and
seal. For best results, ice cream should ripen in the freezer for at
least 2 hours or overnight.
